Gums are largely obtained from the following three groups: (a) the endosperm of some seeds (e.g., guar gum, locust bean gum); (b) plant exudate gums (e.g., gum tragacanth); and (c) tree or shrub exudates (e.g., gum arabic, karaya gum). Among known natural gums, only a few important gums have been applied in the food industry [16,17,18].
